I hope you are all still out there and interested in what I have to share! After a few months of contemplation I have realized how much I've been missing this little ol' blog of mine and I have decided to bring it back to life!! I have spent the last 3 months (approx) thinking about how much I have wanted to get back into blogging but then remembering how time consuming and stressful it started to be. But in these 3 months I also have determined a way to blog and keep my sanity which will be to limit myself to only 3 posts a week. I have already set aside time on my calendar and I am so extremely excited to be coming back to the wonderful blogging community.
This time around I will still be focusing on book reviews, new recipes, crafts, etc but I will also be tossing in some randomized posts...such as Friday Favorites, new product finds, weekend recaps, holiday festivities and more! I actually love that a lot of bloggers do a Friday Favorites post and I think it's a fun way to focus on the positive stuff that has gone on throughout your week.
I can't express how excited I am to be diving back into blogging. And I hope I didn't lose my fabulous readers during this hiatus!!
So without further ado lets kick this off with a new recipe! :)
This past weekend I was lucky enough to spend my entire weekend at HOME!! It was lovely!! I was able to relax, bake, read, and do some things around the house!
I ended up trying a new recipe that I've held onto since last Fall.....Pumpkin Oatmeal Cookies...
These were super easy to make and included two fun ingredients:
Pumpkin Oatmeal Cookies
Ingredients
- 3 cups uncooked oats
- 2 cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp salt
- 1 cup butter, softened
- 1 cup light brown sugar
- 1/2 cup white sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup pumpkin puree
- 1 cup dried cranberries
Directions
- Preheat oven to 350 degrees.
- Combine oats, flour, baking soda, cinnamon, cloves, and salt. Set aside.
- Combine butter and sugar until light and fluffy.
- Add in eggs.
- Add in vanilla and pumpkin puree.
- Add in the flour mixture.
- Stir in cranberries.
- Drop by spoonfuls onto baking sheets
- Bake for 10 - 12 minutes.
- Let cool.
- Enjoy!
I ended up doing a split on these cookies. I divided the batter in half and only put cranberries in one half.

This past week was quite the week of baking and I ended up sending these to Chuckles work today! I just couldn't have any more baked goods in the house! This week alone I made chocolate chip cookies and muffins for Chuckles and Monday night I will be baking cookies for work because....Tuesday is National Homemade Cookie Day!!
