Sunday Dinner

So Tonight for our new recipe Chuck and I made a Tex Mex Meatball Pie! The recipe calls for frozen meatballs but we decided to make our own!!

Here are the Ingredients:

1 Pillsbury refrigerated pie crust, softened as directed on box.
15- 1 inch meatballs ( 1lb ground beef)
3/4 Cup Mild salsa
3/4 cup shredded cheddar cheese
1 cup shredded lettuce
1/4 cup sour cream

1. Heat oven to 350 degrees. Roll ground beef into 1-inch meatballs. Place on a cookie sheet. Place in oven and cook for 20 minutes.
2. Turn heat in oven to 375 degrees.
3. On ungreased cookie sheet unroll pie crust.
4. In a small bowl combine meatballs and salsa, mix together.
5. Pour meatball/salsa mixture onto the center of the pie crust.
6. Fold edge of crust over filling (about 2 inches)
7. Bake for 40-45 minutes.
8. Sprinkle with cheese, bake for another 5 minutes.
9. Remove from oven. Cut into fourths.
10. Sprinkle with lettuce and sour cream.

All ready to go into the oven

Out of the oven for the first time

Fresh out of the oven, ready to cut! Smells so GOOD!!

Ready to be devoured! I topped my piece with lettuce and sour cream! It was so DELISH!!

This recipe was so easy and is definitely a winner for both of us!! I loved it so much! We had a side salad with it, and I was so stuffed afterwards! We are going to be adding this one to our menu! The rate we are going we won't have to do repeat dinners for a month!
Trying out new recipes has been so much fun! I am actually trying a few out this week on my own without Chuck! And tomorrow night we are trying a different spin on the Bow Ties with Asparagus and Ham. We are going to do Bow Tie Noodles, Pesto Sauce and Chicken! It should be awesome!

Hope Everyone had a great sunday!! Now it's time for Movie Night (we have movie night every sunday) and then some Chocolate Banana Snack cake later, it my stomach will allow :-)
Have a Great Monday!
